Lettuce and Potato Salad

This salad has it all: protein, starch and vegetables — add a piece of fruit and you have a very balanced meal.

2 cups coarsely chopped lettuce
2 cups cooked, peeled, diced potatoes
1 cup cooked green beans, cut into 1/2-inch pieces
1 cup cooked peas
1 large ripe tomato, chopped
1 hard-boiled egg, sliced

Vinaigrette Dressing


1 tablespoon olive oil or vegetable oil
2 tablespoons lemon juice
3 tablespoons low-sodium chicken broth (remove fat
1 tablespoon dry mustard
Pepper to taste
Very small amount of salt (optional)
  1. In a large bowl, stir together the lettuce, potatoes, green beans, peas and tomato.
  2. In a medium bowl, whisk all vinaigrette ingredients together.
  3. Garnish with sliced, hard-boiled egg and serve.
